About Pepper

Pepper (Kosho) is general seasoning, spice obtained from fruit of pepper tree. Pepper mainly has three types: black pepper, white pepper, green pepper.

Black Pepper: Fruit of pepper is harvested in fully ripe state and dried. Highly fragrant and has pungency.

White Pepper: Fruit of pepper is harvested before full ripeness, outer skin of fruit is removed and dried. Less pungent than black pepper, flavor is mild.

Green Pepper: Fruit of pepper is harvested in unripe state, processed by pickling in salt water or vinegar. Pungency is somewhat mild, fragrance is rich.

Pepper not only gives flavor and pungency to dish but also is said to have effect of helping digestion. Used in various dishes all over world, one of indispensable seasonings for many dining tables.
